Real Good Food
Slater, Nigel
Fourth Estate UK 1995
Softcover 228pp, 800g for posting, There are hundreds of recipes here - all clear, easy to follow, and delicious, which form the backbone to Nigel Slater's now-classic repertoire. A breath of fresh air in the kitchen, Nigel Slater is celebrated for cutting through the pretension and mystique to offer straightforward, practical guidance with wit and humour. review >>> As with all Nigel Slater's books, Real Good Food is more than just a collection of great recipes; it is a delight to read as Nigel's personality, humour and joy in cooking really great food shines through. This book contains some great ideas for both the novice and experienced cook and shows what good British cooking is all about. There are some international recipes, but the focus is definitely on British food, including some long forgotten, but scrumptious dishes like Pan Haggerty. While some of the recipes might not be exactly slimming, they are definitely worth the calories, particularly the Tarte Tatin of Caramelised Onions, Sausage dishes and the wonderful Baked Sea Bream with Fennel & White Wine. The Really Helpful Cookbook
Watson, Ruth
Ebury Press UK 2000
If you like the witty stabs of Kenneth Williams wit & the seeming insouciance of Nigella Lawson as she prepares a tempting treat then you'll appreciate this love child of them both, Ruth Watson. Ruth Watson offers recipes that blend the very best in today’s stylish home cooking, with invaluable tips on everything from which brand of sugar to use for baking, to clever shortcuts for time-pressured, hungry cooks. Is There Nutmeg in the House?
David, Elizabeth
Chivers Press UK 2001 Large Print
Hardcover 448pp & 900g to post. ex-Cornwall County Library with 3 borrows, usual stamps & indicators & plastic over dj. Review >>> After selecting articles to be collected in the anthology An Omelette and a Glass of Wine, some of the unused pieces were saved. This book is the collection of those set aside articles. Some are more interesting than others, but the good ones are real gems. The descriptions of several, simple courgette dishes were intriguing. Her Hand-Made Mayonnaise story is precise, amusing, and makes me want to make mayonnaise. Baking an English Loaf goes into great detail and encourages everyone to read a few simple instructions and make a decent loaf of bread. She could be sassy. I'm glad Elizabeth David was crazy about food and shared so much info in her many article and books.   Very Good/Very Good

Arise Sir Jamie Oliver The Biography
Hildred, Stafford and Ewbank, Tim
John Blake UK 2007
Hardcover 281pp & just too far over the 500g to go in a small satchel, good idea to add a title to the order & use up that postage. Jamie originally harbored dreams of pop stardom with his band Scarlet Division, but by the age of 16 decided to become a chef. After college he earned his stripes in France and then as a pastry chef before starting at the River Café, {we have several of the books available} where he really learned his trade. It was during a television documentary about the River Café that Jamie first caught the attention of the program's editors. Thanks to his on-screen charisma he was featured heavily in the finished documentary and the offers came flooding in. So 'The Naked Chef' was born. The program was a huge success, with an intimate and fresh approach to the role of television chef. Jamie's informal and playful demeanor, as well as his obvious passion and enthusiasm for food drew in a younger audience and revolutionized the traditional cooking program: cooking became cool! The subsequent television series and books gave Jamie fame and fortune the world over & he was then able to pursue the goal of healthy tasty food for schools. Tightly bound with 2 photo sections.  Excellent/Excellent

Arabella Boxer’s Book of English Food: A Rediscovery of British Food From Before the War
Boxer, Arabella & Back, Philippa
Hodder & Stoughton UK 1991
Hardcover 270pp & 700g to post. This copy comes appropriately from Worcestershire Cultural Services (library, with usual stamps). A Book of English Food is an elegant compendium of brilliant recipes adapted from the cookery books of the 1920s and 1930s by Arabella Boxer - she has written for the Sunday Times magazine and the Telegraph magazine and was Food Writer for Vogue from 1966 to 1968 and 1975 to 1991. She was awarded the Glenfiddich Cookery Writer of the Year Award in 1975 and 1978, a Glenfiddich Special Award in 1992 and won the 1991 André Simon Award and the 1992 Michael Smith Macallan Award for fine writing about British food. The Book of English Food describes the delicious dishes - and the social conditions in which they were prepared, cooked and eaten - in the short span between the two World Wars when English cooking suddenly blossomed. The food in these wonderful recipes comes from the great country houses, where little had changed since Victorian times, the large houses in London and the South, where fashionable hostesses vied with each other to entertain the most distinguished guests at their tables, and less grand establishments, like those in Bloomsbury where the painters and writers of the day contrived to lead cultured and civilised lives on little money. Containing 200 recipes, drawn from cookery books, magazines of the period, family sources or from talking to survivors who still remember those days, A Book of English Food is a fascinating glimpse into another world, and a celebration of English cooking at its finest. review >> 'That rare thing, a cookery book with an argument: viz, that English cookery was once both good and independent of the cuisines of her neighbours . . . a rollicking good read' Observer and 'I still find the calm elegance of her writing an inspiration' Nigel Slater  Very Good/Very Good

Forever Summer
Lawson, Nigella
Ted Smart UK 2002
Hardcover 279 Nigella-approved crisp pp, 1.3kg packed to post. Fresh, innovative, versatile and delicious, it's sultry summer all year round and from around the world with Nigella. With all the style and class of her earlier books, and a whole new concept, this is an irresistible and wide-ranging book of summery recipes which can be eaten at any time - from scrumptious Italian antipasti and Greek mezze to Spanish cuisine, from barbecues to beach picnics, from Moroccan roast lamb to Mauritian prawn curry, from the traditional strawberries-and-cream feel of an English summer afternoon to Indian-summer evenings at home. And to round it off, there's a selection of ice creams, summer drinks and melt-in-the-mouth puddings - who could resist Nigella's Slut-Red Raspberries in Chardonnay Jelly? (well, not me that's for sure) Here's a review that is a really great eg: of what I want in a review, so thank you "bboksthatmatter">>> I am a reluctant convert to Nigella Lawson - all the cult of the personality stuff irritates me enormously - but damn the woman, her recipes are good, even the ones that aren't hers. This book weirdly came out mid-autumn last year and it took me a full six months to overcome my dislike of the look of it to pick up a copy, first from the library and then finally to buy it. Boy am I glad I did! These are cracking recipes, the book is well structured and, as long as you skip the crinch-makingly twee intro, very readable. To be fair to the woman, she also properly credits ideas and recipes she's pilfered from other writers and cooks like Jane Grigson and Ruth/Rose of River Cafe fame. I did throw away the lurid dust jacket and can reveal that underneath is a very well-designed jacket of water washing over sand. It could be a metaphor for the whole book.   Excellent/Excellent/very Good

Michel Guérard’s Cuisine Minceur
Guérard, Michel
Macmillan UK 1977
Hardcover Michel Guérard's Cuisine Minceur is 414pp & just past a kilo to post. In 1974 chef Guérard arrived in Eugénie-les-Bains and, with his wife Christine Barthelemy, began renovating a spa resort which Barthelemy had been running, and which was owned by Guérard's father-in-law. Guérard began thinking about how he could persuade Parisians to make the 500-mile trek to the spa and his restaurant. The spas were for health benefits and his creation - cuisine minceur - became the logical avenue for his new form of low-calorie cooking. Cuisine minceur (literally 'slimming cooking') is a style of cooking created by French chef Michel Guérard, which recreated lighter versions of traditional nouvelle cuisine dishes. Critics acknowledged that the minceur versions by Guérard tasted better and were less filling than their nouvelle cuisine originals. Reviewer says >> This is an excellent book to help one cook French food with less calories. Recipes are great. and >> ... for the first time what the authentic and original cuisine minceur really is - a whole new approach to cooking originated by the phenomenally talented and successful French chef who single-handedly decided that fine French food does not have to be fattening.  Very Good/Very Good

Recipes from Le Manoir aux Quat’ Saisons
Blanc, Raymond
Macdonald UK 1990
Card Cover 280pp, just over a kilo to post. Faults? Card cover corners "sad". Raymond Blanc has achieved worldwide fame as an inspired chef with a relentless drive for perfection. His cooking has been described as 'an extraordinary process of creativity, passion, subtlety, indeed genius'. He is entirely self-taught and has never revealed the secrets of his cuisine. But here he explains his uniquely successful methods and shares some of the very special recipes from his Oxfordshire restaurant, Le Manoir aux Quat' Saisons. M. Blanc's reputation is such that even before it opened in 1984, Le Manoir was awarded two Michelin stars. In keeping with Raymond Blanc's insistence on fresh produce, the emphasis in this book is on seasonal variety, with thirty to forty recipes for each season. With glorious photographs by Michael Boys, a preface by Egon Ronay and foreword by Hugh Johnson, Le Manoir aux Quat' Saisons conveys a little of the genius of the chef widely regarded as the best in Britain. Categorized into soups, cold hors d'oeuvres, fish, poultry, game, meat and desserts. There are also basic recipes for vegetables, sauces and jellies, an introduction to wines, and a list of specialist food and wine stockists. Review >>> This book is amazing. It's complicated, it gets technical, but put the effort in and Raymond shows you how to make the best food ever - far better than you'd have dreamed you could manage. It tastes like you've gone to a fabulous restaurant, your friends will be astonished, and many of his tricks work on much simpler dishes.  Very Good/None issued

The Man Who Ate Everything
Steingarten, Jeffrey
Headline UK 1998
Hardcover The Man Who Ate Everything and Other Gastronomic Feats, Disputes, and Pleasurable Pursuits by Steingarten is 378pp & 700g. Funny, outrageous, passionate, and unrelenting, Vogue's food writer, Jeffrey Steingarten, will stop at nothing, as he makes clear in these forty delectable pieces. Whether he is in search of a foolproof formula for sourdough bread (made from wild yeast, of course) or the most sublime French fries (the secret: cooking them in horse fat) or the perfect piecrust (Fannie Farmer--that is, Marion Cunningham--comes to the rescue), he will go to any length to find the answer. At the drop of an apron he hops a plane to Japan to taste Wagyu, the hand-massaged beef, or to Palermo to scale Mount Etna to uncover the origins of ice cream. The love of choucroute takes him to Alsace, the scent of truffles to the Piedmont, the sizzle of ribs on the grill to Memphis to judge a barbecue contest, and both the unassuming and the haute cuisines of Paris demand his frequent assessment. Inevitably these pleasurable pursuits take their toll. So we endure with him a week at a fat farm and commiserate over low-fat products and dreary diet cookbooks to bring down the scales. But salvation is at hand when the French Paradox (how can they eat so richly and live so long?) is unearthed, and a "miraculous" new fat substitute, Olestra, is unveiled, allowing a plump gourmand to have his fill of fat without getting fatter. Here is the man who ate everything and lived to tell about it. And we, his readers, are hereby invited to the feast in this delightful book. reviewer says >>> Jeffrey Steingarten is a master, managing to be funny (very, very), intelligent, and passionate all at once. He managed to make me reconsider my veganism in that I wanted to try ALL of the dishes he describes in the different essays, which is saying a lot.   Very Good/Very Good/Good

Street Cafe Brazil
Bateman, Michael
Conran Octopus UK 1999
Hardcover Bateman is an English newspaperman, not a brasileiro, but he has conducted a good survey of the kinds of food most often sold on the streets of Brazil. Brazilian food is the product of the fusion of many influences: indigenous Tupí-Guaraní and Tapuia Indian foods, the foods of African slaves (especially Bantu and Yoruban), the foods of Portuguese colonizers as well as the foods of Brazil's Spanish-speaking neighbours. In a country which occupies roughly 45% of the land mass of South America, there are many significant regional differences in cuisine. Brazilians enjoy a dramatically varied cuisine. An introduction to Brazilian cooking is followed by a comprehensive section on typical ingredients with practical advice on special equipment and cooking techniques. The recipes are straightforward and easy to follow.  Excellent/Excellent

A Cook’s Life
Alexander, Stephanie
Lantern (Penguin)  2012
Hardcover 362pp, 2 photo sections, 800g to post. With the Cook's Companion front and centre in half a million kitchens, Stephanie Alexander is the very definition of a household name. Each day thousands turn to her 'food bible' for the most reliable recipes and advice. But before Stephanie Alexander penned a word for the emerging food media, let alone for the Cook's Companion, she had spent decades avidly documenting food experiences. Shaped by her mother's dedication to good food and her father's love of reading, she trained as a librarian and all the while observed, assessed and re-created the dishes she loved. Her monthly university allowance rarely lasted more than a week - all spent on pan-fried flounder and chestnut Mont Blanc. She was seduced over pain Poîlane while working as an au pair in Paris, and later over ackee and saltfish in London. In 1966, with no formal culinary training and a newborn baby, but brimming with confidence and sheer determination, she opened Jamaica House with her first husband. the personal toll was great and it was many years until she emerged on the restaurant scene again. Stephanie's Restaurant would become part of Melbourne food folklore, permanently raising the bar for restaurant dining in Australia. At the time of its opening, in 1976, a salad to most people meant iceberg lettuce, no-one had heard of goat's cheese and ginger came in a tin. Over the next twenty-one years, in her quest for the sort of produce she had enjoyed while living and travelling in Europe, Stephanie championed small local suppliers or grew it herself. Her indefatigable determination and single-minded vision have influenced - and sometimes intimidated - a generation of chefs, cooks and diners. and now her Kitchen Garden Foundation is inspiring tens of thousands of primary school children across Australia to grow and cook their own food. A Cook's Life is a very personal account of one woman's uncompromising commitment to good food, and of how it shaped her life and changed the eating habits of a nation.  Excellent/Very Good

The Olive Oil Cookbook Cooking with the Olive and Its Oil
Spieler, Marlena
New Burlington Books / Quintet  1998
Hardcover 128pp, 800g to post. Marlena has credits on more than 30 books. Olive oil has always been a staple of the Mediterranean diet and cooking with olives and olive oil has become part of modern and traditional cuisine throughout the world. It is an intrinsic part of the way we eat. Olives and olive oil pair wonderfully with garlic, chillies, vegetables, pasta, fish and lighter meats, all of which are increasingly featuring in today's diet; not only does olive oil offer taste, it gives us a healthier option to cooking with butter and other oils. Marlena Spieler shares with us a selection of truly mouthwatering recipes - simply dressed bowls of olives, classic salads, marinades, flavourful vegetable dishes and moist aromatic cakes. Advice is given on choosing an olive oil that is appropriate to the dish that you are preparing, as, like fine wine, oils vary in colour, flavour and aroma. Until recently olive groves were neglected in favour of the production of other oils, but now, thankfully, the world has come to appreciate what the ancient Greeks, Romans and Egyptians knew thousands of years ago - that the olive is on exceptional fruit and its flavour and aroma can make a simple dish something truly outstanding.   Very Good/Very Good

A Passion for Mushrooms
Carluccio, Antonio
Pavilion Books Limited UK 1989
Hardcover This is a book on both hunting and eating wild mushrooms. It is not only a gastronomic exploration, with around 100 original, tested recipes, many from the author's Neal Street Restaurant in London. About the author >> In 1958, at the age of 21, Antonio Carluccio began to cook simple pasta suppers for himself and his flat-mate on a two-ring stove in Vienna. Now, known for his gentle manner, gruff voice and his wild crop of white hair, Antonio is regarded as the Godfather of Italian gastronomy. Being born on the Amalfi Coast in the South and raised in the wooded North-West has given Antonio a rare and privileged breadth of culinary knowledge. It was here, in Piedmont, at the age of seven, that Antonio started his life-long past-time of hunting and collecting mushrooms and funghi with his father. After time spent living in Germany, Antonio moved to London in 1975 and while learning English, traded as a wine merchant of Italian wines. His hobby of studying and collecting wild mushrooms continued to flourish. A nice review >> Carluccio at his best - mushrooms are his passion! I do not know if he has "mushroom" for any more!  Excellent/Very Good

Nigel Slater’s Real Food
Slater, Nigel
Ted Smart UK 1998
Laminated Pictorial Boards 320 well illustrated pp & 1.3 kg to ship. Observer columnist Nigel Slater has chosen his eight favorite foods>potatoes, chicken, sausages, garlic, bread, cheese, ice cream, and chocolate< and sculpted a sensational cookbook around them. For each of the eight he offers a selection of recipes, some from friends and colleagues, including Alastair Little, Rowley Leigh, Peter Gordon, and Nigella Lawson. The book is peppered with short essays on ingredients that bear Slater's trademark dry wit. He is definitely one of Britain's best food writers and his collaboration with photographer Jonathan Lovekin makes this book stand out from the crowd. Since it's publication in 1998, which tied in with his first TV series, stylish and innovative ‘Real Food’ has become the essential food book to have, both on the kitchen shelf and (qualified by his fanmail) on the bedside table. From sausages to ice cream, potatoes to garlic, the book covers Slater's indispensable signature dishes – the ones you wouldn't be without for love or money. Based on Nigel Slater's absolute favourite food, whether it be The Stickiest Ever Chicken Wings or Baked Goat's Cheese and Pesto in Filo Pastry, Smoked Mackerel Dauphinoise or the classic Bacon Butty, this classic has gone a long way in at last creating a nation of food lovers. In typically unpretentious style, Nigel finds good things to make using mass produced white bread to the finest Italian loaves, or with standard English confectionery to real chocolate made from cocoa solids. These recipes are still up-to-the-minute, accessible and inspiring.   Very Good/No Jacket

Pasta Improvvisata: How to Improvise in Classic Italian Style
Erica De Mane
Scribner USA 1999
Hardcover Pasta Improvvisata: How to Improvise in Classic Italian Style by Erica De Mane is 400pp of ex-lib goodness (usual indicators, stamps, plastic overwrap), a kilo on the scales. here's the short descriptor >> Demonstrates how to improvise pasta dishes and includes recipes for such dishes as ravioli with scallop mousse and red pepper sauce and cavatelli with morels, montasio, and arugula. . . .and here's the longer version >>> Erica de Mane's rationale is to start with the feel of a particular Italian dish--just the approach or style--and then improvise with the kinds of ingredients actually available in supermarkets. She ends up with dishes that are in the Italian spirit, but speak to a willingness to be experimental, a willingness to say "Hey, these are the ingredients I have on hand, and this is the pasta dish that comes as a logical conclusion". Each recipe is a point of departure that encourages inspired cooking.   Very Good/Very Good

James Beard’s Fish Cookery
Beard, James
Faber & Faber  1955
Hardcover Before Rick Stein, before Doyle's books, before Tets, before Graham Kerr's huge American success, before Hugh & Nigel there was a giant (literally) in the foodie world in the shape of one, JA Beard and this is his book > James Beard's Fish Cookery by Beard is 460pp in a fragile dj (dj has multiple separations at the fold points, hence now protective wrapper) Though perhaps not as well known in Australia as he should be - James Andrew Beard (May 5, 1903 - January 21, 1985) was an American chef and food writer & the central figure in the story of the establishment of a gourmet American food culture. He trained initially as a singer and actor but not having much luck in the theatre, he and his friend, Bill Rhodes, capitalized on the cocktail party craze by opening a catering company, "Hors d'Oeuvre, Inc.", which led to the publication of Beard's first cookbook, Hors D'Oeuvre and Canapés. During the 50s Beard made his name as 'James Beard', the brand name, the face and belly of American gastronomy. Julia Child accurately sums up Beard's personal life in a brief description: "Beard was the quintessential American cook. Well-educated and well-traveled during his eighty-two years, he was familiar with many cuisines but he remained fundamentally American. He was a big man, over six feet tall, with a big belly, and huge hands. An endearing and always lively teacher, he loved people, loved his work, loved gossip, loved to eat, loved a good time." Here's a lively review of the title >>> I freaking adore James Beard. Go to your market, buy whatever fish appeals, get home and flip through this book to see what Beard says you should do with it. Squash your instinct to cut down on his recommended amounts of butter, cream, etc. (I have the first edition from 1954). Especially excellent for those who want to firmly grasp basic and uninvasive techniques that allow the fish's own fishliciousness to shine. Give yourshelves a vintage treat.  Good/Poor

Lobscouse & Spotted Dog Which It’s a Gastronomic Companion to the Aubrey/Maturin Novels
Grossman, Anne Chotzinoff, Thomas, Lisa Grossman
W W Norton & Co Inc  1997
Hardcover foreword by Patrick O'Brian, 304pp & 800g ( lobscouse Sailor's stew of meat and vegetables, classically thickened with ship's biscuit - Lobscouse and Spotted Dog, the definitive food reference to the Aubrey/Maturin novels. These are the foods that Jack and Stephen ate. We do not recommend them to the unimaginative or faint of heart: some of them call for exotic, revolting, or fearfully expensive ingredients; many take upwards of a week to make; most of them cheerfully violate all the nutritional tenets of the health-conscious '90s. They are all, however, practical and authentic recipes, tested to our satisfaction (and to the detriment of our waistlines) in our own kitchens. ) Celebrate the joys of Patrick O'Brian's acclaimed Aubrey/Maturin series with this delightful cookbook, full of the food and drink that so often complement Jack Aubrey and Stephen Maturin's travels. Collected here are authentic and practical recipes for such eighteenth- and early-nineteenth- century dishes as Burgoo, Drowned Baby, Sea-Pie, Solomongundy, Jam Roly-Poly, Toasted Cheese, Sucking Pig, Treacle-Dowdy, and, of course, Spotted Dog. Also included are historical notes on the origins of the dishes as well as sections on the preparing of roasts, puddings, and raised pies."[This is a] splendid cookbook...graced with erudite bits of naval and gastronomical history....Deftly researched and written in prose nearly as funny as O'Brian's own.">Publishers Weekly "A thoroughly readable cookbook, as well as a useful appendix to a great series of novels and a newly opened window into a time now nearly 200 years gone.">San Jose Mercury News -reviewer says >>> Good reading, not just good recipes. Fair warning, though - go easy on those drink recipes; they'll knock you on your... face.  Excellent/Very Good/Excellent/very Good

Nigel Slater’s Real Food
Slater, Nigel
4th Estate UK 1998
Hardcover 320 well illustrated pp & 1.3 kg to ship. Gift inscription. Faults? last 4 or so pp have a corner crease lower right. Very Good/Very Good

The World Atlas of Food: A Gourmet’s Guide to the Great Regional Dishes of the World
Grigson, Jane
Spring Books  1988
Hardcover 1.6 kg & 318pp. The "World Atlas of Food" is a reading cookbook that has recipes in it too. It describes the foods that go into the recipes; explains the origin of foods and recipes; gives information on the geography and the people in countries around the world and entertains and informs the reader. It is book of knowledge for the cookbook collector, the cook, and the diner. The book is one third 'The Good Ingredients' & two thirds 'The World of Food', then a general index and a recipe index. About Jane >>> Working in publishing Grigson's growing interest in food and cooking led to the writing of her first book, Charcuterie and French Pork Cookery (1967), which was accorded the unusual honour for an English food writer of being translated into French. Elizabeth David read the book and was impressed by it, and recommended Grigson as a food columnist for The Observer, for whom she wrote a column from 1968 until her death in 1990. Her long-lasting association with the newspaper produced some of her most successful books, such as Good Things (1971) and Food With the Famous (1979). In 1973, Fish Cookery was published, followed by The Mushroom Feast (1975), a collection of recipes for cultivated, woodland, field and dried mushrooms. She received both the Glenfiddich Writer of the Year Award and the André Simon Memorial Fund Book Award for her Vegetable Book (1978) and for her Fruit Book (1982), and was voted Cookery Writer of the Year in 1977 for English Food.  Very Good/Good

Ainsley’s Big Cook Out
Harriott, Ainsley
BBC Books UK 1999
Hardcover 191 Ainsley-inspired pp, 800g to post. One of our favourite foodie presenters, the irrepressible Ainsley Harriott returns with another slap-up collection of prime barbie treats. This time Ainsley has been doing a spot of globetrotting, picking up hot outdoor dishes from Canada, the USA, Mexico, Brazil and Argentina for our delectation (and for the accompanying television series). For starters, a slew of flavour enhancers to get things going--marinades, glazes, salsas and sauces, spiced up with Ainsley's unique style of nomenclature, such as "Ooh-la-la Red Wine Marinade" or "Wicked Kicking Salsa". Then we're off with a collection of recipes that burst with flavour. Appetisers? Try "Silvana's Sizzling Snappy Mussels". Main Courses? For chicken, what about "Alabama Chicken Brummie Balti"? (Birmingham, Alabama, that is.) Or for meat, "Chilli and Mustard Crusted Leg of Lamb"? Vegetables are often at their most flavoursome grilled, like "Spicy Lime-Charred Corn on the Cob". Even desserts get the full barbecue treatment, such as the sumptuous "Oaxaca Chocolata Omeletta", a chocolate omelette stuffed with crème fraîche and grilled.  Excellent/Excellent

Mastering the Art of French Cooking (Volume 1)
Simone Beck, Louisette Bartholie,
Penguin UK 1977
Papeback "Anyone can cook in the French manner anywhere," wrote Mesdames Beck, Bertholle, and Child, "with the right instruction." And here is the book that, for more than forty years, has been teaching us how. Mastering the Art of French Cooking is for both seasoned cooks and beginners who love good food and long to reproduce at home the savory delights of the classic cuisine, from the historic Gallic masterpieces to the seemingly artless perfection of a dish of spring-green peas. 768 well bound pp - faults? Cover looks to have met Gordon Ramsay > lower right corner creased, discoloured too - sigh. it's just the sad cover that causes the low price. River Cafe Cookbook Two
Rose Gray Ruth Rogers
Ebury Press UK 1997
Paperback The first River Cafe Cook Book was a publishing phenomenon, winning both the Glenfiddich Food Book of the Year and the BCA Illustrated Book of the Year Awards. As well as the innovative, striking design of the book, the appeal also lies in the exquisite simplicity of its food. A sophisticated re-interpretation of the cucina rustica or farmhouse cooking of northern Italy, the food of the River Cafe relies on good quality, fresh, seasonal produce. Ruth and Rose's direct, uncomplecated approach means that many of the dishes are strikingly simple-fish, meat and vegetables are chargrilled, pan-fried and baked-but all of them are vibrant with flavour. This new book retains the essential style of The River Cafe while reflecting the new directions Ruth and Rose's cooking has taken since their first book. Over 200 completely new recipies illustrated and presented - a must both for those who enjoy the delights of cooking. 352 clean well bound pp profusely illustrated. Italian Food
ELIzabeth David
Barrie & Jenkins, London UK 1987
Hardcover dj is all there but with a small closed tear at top and a few stains at lower (I guess the book was used for what it should be used for - so just lie to your friends and say Miss David caused that spill reaching for a glass of Chablis). GBks content > Elizabeth David's Italian Food was one of the first books to demonstrate the enormous range of Italy's regional cooking. For the foods of Italy, explained David, expanded far beyond minestrone and ravioli, to the complex traditions of Tuscany, Sicily, Lombardy, Umbria, and many other regions. David imparts her knowledge from her many years in Italy, exploring, researching, tasting and testing dishes. Her passion for real food, luscious, hearty, fresh, and totally authentic, will inspire anyone who wishes to recreate the abundant and highly unique regional dishes of Italy. review > This is a classic book on traditional Italian cooking, worth reading for its introductions as much as the actual recipes. and one more > One of the funniest and engaging reads on traditional italian cookery. 240pp in great order with masses of well themed illustration. Probably 1.4kg packed weight; buy the book, pour a glass & enjoy the Italian "gioia di vivere".  Very Good/Good-fair

French Country Cooking
David, Elizabeth
Dorling Kindersley UK 1987
Hardcover This copy almost fine - previous owner's plastic wrapper. First published sixty years ago while food rationing was still in force, Elizabeth David used this book to introduce to the nation's bland palate, ingredients and recipes previously undiscovered in postwar Britain. Many people of that era had never experienced anything other than British cooking meat, two veg and a nice steamed pudding. ....------...... She starts by setting the record straight: 'Those who care to look for it will find the justification of France's culinary reputation in the provinces, at the riverside inns, in unknown cafés...in sea port bistros...and nowadays in cafés routiers, the lorry-drivers' restaurants. In such places the most interesting food of France is to be found.' From having lived with a French family while studying over there, she was able to bring firsthand knowledge to this short yet concise guide to provincial French cooking. She starts with a chapter on the Batterie de Cuisine. But it's the collection of regional recipes that follow that made this book such a treat for 1950s Britain; divided into sections on soups, fish, eggs, luncheon, supper and family dishes, meat, poultry, game, vegetables, salads, sauces and sweets, she gives an entertaining and informative introduction to each. French Country Cooking reveals the immense diversity of the cuisine through recipes that range from a primitive peasant soup of the Basque country to the refined Lyonnaise dish of Poulet à la Crème. To those used to the raditional format of recipe writing the book will come as something of a surprise since Elizabeth David weaves the ingredients into the methods complete with details of the region, tradition and people. Elizabeth David's acclaimed writings are often cited as an inspiration by many of today's leading chefs, as well as home cooks, and are essential to any serious cookery book collection. Book in beaut condition with very attractive period art to illustrate as well as line art by John Minton, a book to savour with a nice chablis or maybe a Pernod & ice.   Excellent/Excellent

Memories of Gascony
Koffmann, Pierre
Pyramid Octopus UK 1990
Hardcover review - Having been lucky or mad enough to work with the Master, I just had to have his books. What was my surprise when I got sucked into Mr Koffmann's childhood memories of food and cooking. It s not only a brilliant cookbook, the stories are sometimes funny , sometimes moving. A real work of art. Love it. Thank you Monsieur Koffmann. Guardian review (well worth a google - In 1990, Koffmann wrote Memories of Gascony, reminiscences and recipes from the Oratoire accompanied by dewy photographs of the soft countryside. In it you will find his grandmother's recipe for walnut leaf aperitif (take 50 walnut leaves, 40g of orange peel, a litre of armagnac, a kilo of sugar and five litres of red wine; macerate for eight days, stirring twice a day; sieve, bottle, and store in a cool place for three months). It is both a sign of the excellence of its recipes, and of Koffmann's popularity, that a first edition of this volume, assuming you are able to track such a thing down, will now set you back up to £275. Well ours isn't that much but it's worth that in enjoyment!  Excellent/Excellent

The French Kitchen A Comprehensive Guide to French Cooking for Australians
Holuigue, Diane
Methuen Australia 1985
Softcover High praise for this culinary classic - "these [French cooking] traditions of excellence are reflected in every page and chapter of this considerable work which it is my pleasure to introduce. It is exceptional in its range, its variety, and for enticing us off the beaten track. It succeeds in putting French cuisine, be it bourgeosie or the Haute Cuisine of the restaurant chefs, within reach of a large audience, without sacrificing quality and with a discipline which confounds criticism. Diane is challenging us to uphold the standards she maintains through her knowledge and dedication. Her book is really a continuation of the teaching process she started fifteen years ago in The French Kitchen in Melbourne, where she provides enlightenment for beginers and a continuing stimulus for the more experienced cook." 456pp with some colour plates throughout. Chateau Cuisine
Willan, Anne
Conran Octopus  1995
Softcover 224 jealousy-inspiring pp, French flaps (how appropriate) & just over a kilo to post. Rather than me wax lyrical about a Lotto win here's an appropriate comment from shesabetty > The book, a mix of coffee table travel book and cookbook, is by Anne Willan, the founder of the renowned La Varenne cooking school. Willan's a fascinating figure in her own right, a somewhat less-heralded, British Julia Child. For many years, she ran her cooking school from the Château du Fey in Burgundy; that building is included here, along with 33 other châteaux from all over France. As a child, I remember marveling at this book's fairy tale architecture, country landscapes, and slightly bizarre French country dishes. Chicken in cider jelly? Pan-roasted wood cock? Tarragon liquer?! I could only dream of what these things tasted like, and in my dreams they were spasm-inducing delicious. BTW we have several other Willan titles including the gift-worthy The Country Cooking of France.  Excellent/None issued

Gould, Kevin
Hodder & Stoughton UK 2000 1st
Illustrated Board Cover Let's start with a review >>> The whole book had a mystique about it that greatly appealed to me. How about, 'Whole Roast Duck with Hairdryer', 'Tagliatelle with Bottarga and Red Chile' or Fresh Mint Tea with Pine nuts. I loved its retro, grungy and eclectic collection of recipes, photos and snippets. Now to the facts, its 208pp seem as quirky as our book "The Futurist Cookbook" & its 60s style endpapers are auto-happiness generators. I opened it & Date & Banana Pud appeared so I had to close it lest the keeping-temptation took hold. The Cook’s Enyclopaedia Ingredients and Processes
Stobart, Tom
Grub Street UK 1998
Hardcover Just over a kilo to post, here in 457 crisp pages is a descriptive compendium of just about everything we eat and how we cook it or otherwise transform it from a lower state of edibility to a higher. Hundreds, if not thousands, of ingredients are described, with English and foreign synonyms and scientific names; recipes are given in many cases to illustrate the use of the foodstuff in question. Cooking processes are explained in great and illuminating detail. The aim is both to entertain and to instruct--in particular, to give a sense of the essence and individuality of each ingredient. Tom Stobart has travelled widely, both as an explorer and a film maker, and his book is everywhere informed by an eye for telling details and an ability to evoke the background and context of the ingredients he describes. review >> This certainly makes a comprehensive addition to my cookbook library.   Excellent/Excellent

Hardcover A'zon review - this is a truly beautiful book. I opted out of obtaining Escoffier's master cookbook, for I am no master. I thought a small touch of his on my shelf is all I need. And after taking a glimpse, many times through this book, I am truly happy with it. Many recipes are explained in great detail as are the instructions (some are on the lean side). Here's what's inside >> With 275 photos and more than 160 recipes, "This is an intimate appreciation of both the food and culture of Burgundy from an authority on French regional cuisine. Including stunning colour photographs and more than 160 recipes, Anne Willan elegantly interweaves chapters on her life in the seventeenth - century Chateau du Fe with insights into the work and people of its surrounding quarters." review >>> Lovers of traditional French cuisine, and especially those who know Burgundy, will find this book evocative of visits to the region. Here, the charm and traditions of the area are authentically captured in images, text and recipes by Anne Willan, who founded the well-known French cookery school, La Varenne, in 1975. Recipes range from classics such as Boeuf Bourguigon, Pot au Feu and Tarte Tatin, to more gastronomic challenges like Snail and Mushroom Ravioli, and Chocolate & Candied Orange Tartlets. Immensely readable, with a great selection of new and traditional recipes.   Excellent/Very Good/Very Good/Good

Recipes from Le Manoir aux Quat’ Saisons
Blanc, Raymond
Macdonald UK 1990
Hardcover 280pp, 1.5kg packed to post. Faults? Short repaired tear at dj flap fold rear. Very Good/Good

Paul Heathcote’s Rhubarb and Black Pudding
Matthew, Fort; Heathcote, Paul
Fourth Estate UK 1998
Hardcover 224pp with masses of illustration throughout, heading to a kilo packed for post. Rhubarb & Black Pudding is a rare find among books about food. It not only provides fabulous recipes, but it is also a good read. Written by award-winning journalist Matthew Fort, the book serves three functions: it paints a portrait of Michelin and Egon Ronay star chef Paul Heathcote, it records his recipes, and it describes the atmosphere in his restaurants, Manchester's Heathcote's and Preston's Heathcote's Brasserie. Stunning colour photographs have been used to illustrate the food and emotive black-and-white pictures are used with reportage on kitchen activities, the landscapes of the Ribble Valley and the changing seasons in Lancashire. The book is divided into seasons and clear, concise and very detailed instructions are included in the recipes. Heathcote's food has been described as similar to the French cuisine du terroir, but it remains distinctively British or even Lancastrian. His approach, in his own words, is to use seasonal ingredients and to avoid fashion trends. He is quoted as saying: "One of the bees in my bonnet is that too many chefs want to cook what's in fashion. They want to put plenty of olive oil and roasted peppers on to their menus, and every restaurant you go to has a similar kind of feel to it. Why can't we use things the same way chefs do in France and Italy, in the villages and bistros. They cook what their suppliers have in season." The result is pig's trotter filled with ham hock and sage, jellied eel terrine, roast breast of Goosnargh chicken, roast duckling with mead, broth of quail with wild mushrooms, baby leeks and artichokes, and black pudding. Desserts are just as good: apple tarts with gingerbread ice- cream and cider butter, hot banana soufflé, or deep fried Stilton fritters. >>>> if you read the above and the idea of roast duckling with mead doesn't bring tears of joy and a smile to your face please have a relation contact a heart donor registry right NOW! Matthew's colourful introductions to each section also vividly convey the changing seasonal landscape and the creative processes as they unfold in the kitchen.   Excellent/Very Good/Excellent/very Good

Ma Cuisine
Escoffier A.
Paul Hamlyn  1965 First Edition
Hard Cover 884 crisp pp, 1.2 kg, first English edition. Georges Auguste Escoffier's "My kitchen" is addressed specifically to housewives everywhere. Almost 900 pages of recipes that have revolutionized the kitchen. Georges Auguste Escoffier was considered the "king of chefs" and the "chef of kings". Doyen of haute cuisine, one of the founders of London's famed Savoy Hotel, and probably the greatest cook of all time: Auguste Escoffier occupied an unchallenged position in the realm of gastronomy. This collection of incomparable recipes--classic soups, sauces, fish and shellfish, meat, poultry, game, sandwiches, salads, vegetables, sweets, jams, and beverages--reflects a lifetime of skill and experience. Among the sublime tastes elegantly presented here: a Chicken Veloute Sauce with Cream; Sole Poached in White Wine, Butter, and Tomatoes; Hot Lobster Mousse; Fillet of Beef with Truffles and Madeira; Potatoes Nana; Chestnut Croquettes; and Meringue with Custard Cream. He modernized and codified fine dining establishments creating prestige and many recipes were later applied by other chefs. review >> A classic of 20th century French cuisine originally published in 1934 by Flammarion, with an excellent foreword by Andre Simon, and translated by none other than Oscar Wilde's son, Vyvyan Holland.  Very Good/excellent/Very Good/Good

Da Silvano Cookbook Simple Secrets from New York’s Favorite Italian Restaurant
Marchetto, Silvano
Bloomsbury  2001
Hardcover 204 crisp pp with lovely illustrations throughout, about 1.3 kg to post. Here's the short blurb >>> Da Silvano was one of the first restaurants to bring true Italian cooking to New York, serving elegant simple food. This cookbook presents uncomplicated dishes using fresh, seasonal ingredients along with a down to earth attitude and some great stories from the author. longer blurb >>> From legendary restaurateur Silvano Marchetto-owner and chef of the twenty-six-year-old institution that was one of the first restaurants to bring true Italian cooking to New York. While a lot of high-powered restaurants serve impressive, complicated food that results in beautiful, but not very practical, cookbooks, Da Silvano's food is known for its elegant simplicity. Infused with owner and chef Silvano Marchetto's engaging personality, Da Silvano Cookbook sparkles with the pleasure that comes from making and eating fresh and delicious food. From the wonderfully simple Garlic Soup to the rich and always satisfying Osso Buco alla Milanese, the 120 recipes make this an indispensable guide to the best Italian cuisine. Silvano has been feeding and charming celebrities and locals alike at his Manhattan restaurant for twenty-five years, from Gwyneth Paltrow to Yoko Ono, Jack Nicholson to Patti Smith. Whether it's a memory of sage leaves from his childhood in Florence or a mention of Warren Beatty's fondness for truffles, Silvano slips an anecdote into every recipe, the garnish on clear, easy-to-follow directions that combine to make this cookbook as useable as it is delightful.   Excellent/Excellent/very Good

Audrey Gordon’s Tuscan Summer
Gordon, Audrey
Hardie Grant Books  2010
Card Cover Oversized French flaps enclose the lavishly illustrated 224 pp @ just under a kilo. Join Audrey Gordon as she travels to the heart of Italy and shares the recipes, produce and memories of her Tuscan summer. It was only a matter of time before someone released a cookbook parody--every year our bookshelves groan from the weight of these mighty tomes as TV shows like MasterChef whet our appetites for home cooking. So we are incredibly fortunate that Audrey Gordon's Tuscan Summer was written by the talented team behind the `Jetlag' series (Molvanîa, Phaic Tan and San Sombrèro). Join Audrey Gordon, voted three times Britain's sternest chef, as she travels to the heart of Italy and shares the recipes, produce and memories of her Tuscan summer. Visit traditional farmhouses, local trattorias and sample the stunning range of local produce on offer as Audrey shares the sights, sounds and occasionally, smells, of regional Italy. Then sample these delights at home with the range of delicious and easy to make recipes that Audrey, inspired by Italian traditions, has created for the home cook. This book is not directed at celebrity super chefs or haute cuisine high flyers dazzling diners in their Michelin starred restaurants. It's written for you, the ordinary cook, stuck at home with insufficient bench space and a set of chipped mixing bowls. My fervent hope is that it will inspire you, give you the confidence to believe that you can be a wonderful cook or, at very least, an adequate one. This book is meant as a guide, not a set of strict instructions you may only deviate from at your peril! There's no need to slavishly follow my every measurement and step. Does a violinist playing Beethoven not occasionally add a few notes? Or an aircraft pilot about to take off sometimes skip a pre-flight safety check or two?  Excellent/None issued

Kitchen: Recipes from the Heart of the Home
Lawson, Nigella
Chatto & Windus  2010
Hardcover Kitchen: Recipes from the Heart of the Home by the talented Nigella Lawson is some 512 pages & heading towards 2 kilos. Compendious, informative and engaging, 'Kitchen' offers feel-good food for cooks and eaters that is comforting but always seductive, nostalgic but with a modern twist - whether express-way easy-exotic recipes for the weekday rush, leisurely slow-cook dishes for weekends and special occasions, or irresistible cakes and cookies in true "domestic goddess" style. It answers everyday cooking quandaries - what to give the kids for tea, how to rustle up a meal for friends or an impromptu kitchen party in moments, or what to do about those black bananas, wrinkled apples and bullet-hard plums - and since real cooking is so often about leftovers, here one recipe can morph into another...from ham hocks to pea soup and pasties, from braised chicken to Chinatown salad. This isn't just about being thrifty but about being creative and seeing how recipes evolve. As well as offering the reader a mouthwatering array of inspired new recipes - from clams with chorizo to Guinness gingerbread, from Asian braised beef to flourless chocolate lime cake, from Pasta ala Genovese to Venetian carrot cake - Nigella rounds up her kitchen kit must-haves (and, crucially, what isn't needed) in the way of equipment and magical standby ingredients. But above all, she reminds the reader how much pleasure there is to be had in real food and in reclaiming the traditional rhythms of the kitchen, as she cooks to the beat of the heart of the home, creating simple, delicious recipes to make life less complicated. The expansive, lively narrative, with its rich feast of food, makes this new work a natural 21st-century successor to Nigella's classic How To Eat, this time with a wealth of photographs from the instructive to the glorious, and accompanied by a BBC TV series. 190 recipes, including over 60 express-style at 30 minutes or under. reviewers say >>> Another magical tome from Nigella Lawson. And again, I found her wit so enjoyable that I read it like a novel. and >>> Like with her other books Kitchen is not only full to the brim with luscious recipes and inspiring photography but it’s teeming with Nigella's own seductive musings on the way we eat and prepare our food.  Excellent/Excellent
